These recipes are just for fun, and I think that they can be enjoyed as part of a balanced diet.

i was a multi-award winning food/ health blogger

Yep. From 2015 to 2020 I had a health food blog. 

In 2020 I took the decision to delete the blog. It's no longer my passion, plus I disagree with the lifestyle that I was promoting in some of my earlier posts.

I was still struggling with bulimia when I started the blog and my definition of healthy eating was very restrictive. 



- 1 tbsp acai powder
- 1 frozen* banana
- 1/2 cup frozen raspberries
- 1/2 cup frozen blueberries
- 1/2 cup coconut water
- your favourite toppings

Low Cost  Acai Bowl

The most popular (re-shared) recipe EVER.

* Peel the banana. Chop it into slices and place it in a ziplock
or reusable freezer bag in the freezer overnight.

1. Blend all of the ingredients until smooth.

2. Transfer the mixture to a bowl and add your toppings

METHOD

- 3/4 cup milk of your choice
- 1/2 cup oats
- 1 small banana
- Toppings
   1 cup of pre-frozen berries
    1-2 tbsp nut butter or tahini

Quick  &  Easy Banana Porridge

Recipe made by the most people

1. Mash the banana and add it to a cereal bowl. Then add the oats and plant-based milk. Stir well. 

2. Cook the oats in the microwave for 60 seconds. Stir them and cook for a further 30-60 seconds.

3. Pour out 1 cup of frozen mixed berries into a small bowl (or I usually just use a mug). Microwave them for 60 seconds. 

4. Pour the berries and juice over your oats then drizzle on the nut butter.

- 2 cups rolled oats
- 1/2 cup almond butter (or nut butter of your choice)
- 1/3 cup maple syrup
- 1 tbsp vanilla bean paste
- 2 tbsp flax seeds + 5 tbsp water
- t tsp coconut oil
- 1 tsp baking powder
- 1/4 cup raisins
- 1/4 cup roasted, salted and shelled pistachios

My husband's favourite recipe. 

BACK TO INGREDIENTS

1. Mix together the flax seeds and water in a small bowl.

2. Preheat the oven to 180°C.

3. Mash the bananas and add to a large pan with the coconut oil. Cook the bananas on a medium heat for 2-3 minutes until they start to brown and smell more fragrant.

4. Add in the maple syrup and almond butter, then stir until everything is mixed well.

5. Take off the heat and add the rest of the ingredients including the flax seed mixture.

6. Pour the mixture into a greased or lined baking tray or loaf tin. Make sure that you have pressed it down evenly.

7. Cook for 20-25 minutes.

8. Wait until cool before cutting. Store in an airtight container.

Pistachio  &  Maple Oaty Squares

My husband's favourite recipe. 

method

- 1 apple
- 1 squeeze lemon juice
- 1/3 cup finely grated carrot
- 2 tbsp raisins (optional)
- 1 1/2 tsp apple cider vinegar
- 1 tbsp ground flaxseeds + 2 tbsp water
- 1 heaped tbsp cashew butter
- 1 cup spelt flour
- 1/2 tsp baking powder
- 3/4 tsp baking soda
- 3 tsp spices to taste (e.g. cinnamon, ginger, nutmeg)
- 1/2 cup plant-based milk
- 1 tbsp maple syrup (add more if desired)
- coconut oil (to cook)
- Yogurt (of your choice) for topping

Carrot  &  Apple Pancakes

One of my favourite recipes. 

BACK TO INGREDIENTS

1. Mix together the flax seed and water in a small bowl.

2. Grate the apple using a fine grater. Add half of the apple to a mixing bowl and half to a small container. Squeeze the lemon juice over the apple in the container and store in the fridge - this will be your topping.

3. Add the carrot, raisins, apple cider vinegar, cashew butter and flax seed gel to the mixing bowl and stir in.

4. Mix in the dry ingredients. Followed by the milk and maple syrup. The mixture should be thick with bubbles appearing.

5. Place your pan on a medium heat. Use 1/2 tsp of coconut oil and 1 heaped tbsp of batter per pancake. Cook each pancake for around 3 minutes per side. 

6. Once you have cooked all of the batter then stack up your pancakes and top with the apple sauce and yogurt.
